// Pumpkin Pie Bread //

Sunday, November 9, 2014

Pumpkin bread is one of our favorite snacks for the fall months but the only downfall is that along with that DELICIOUS flavor, comes some serious sugar! We try to keep healthy and are always looking for fun alternatives to the easy (bad-for-you versions) of food. That being said we got a little creative with one of our favorite recipes and man are we happy with the outcome. Our yummy version of Pumpkin Bread has that fantastic pumpkin pie texture AND flavor we all love! By making it in bread-form, you have an easy treat to snack on when you are on your way out the door in the morning. You can also make it into muffins, either way it is equally scrumptious and filling!

Ingredients //

3 // Eggs
1 cup // Pure Pumpkin
1 cup // Macadamia Nut Butter
1 teaspoon // Baking Soda
2 teaspoon // Cinnamon
1/2 teaspoon // Sea Salt
1/4 cup // Honey

Directions //

Preheat the oven to 350ยบ

...In a medium bowl mix all ingredients, until smooth...

...Pour Mixture in a bread pan OR muffin tin...

...Bake bread for 35 minutes // Bake muffins for 25 minutes...

...Allow to cool and then cut into slices...

An extra tip is to NOT store in a Tupperware as the moisture will cause these to go bad quickly. Cover your container with tin foil and slice holes in the top to allow air, this helps your bread last an entire week! Enjoy //
